Meet the team
Lara was born in Rio de Janeiro, Brazil, but was raised in rural South America. Not your average child, she had a pet deer, owned a hunting rifle and spent her days in the field assisting her dad with the farm. She learnt to cook on a traditional wood fire stove and witnessed the consequences of large-scale industrial farming as she grew up. She went on to work with social impact and sustainability before taking up knives and settling as a chef in London. Co-founder of the street food company Growlers, and lecturer on food sustainability, Lara spends her time between kitchen, food truck and books, always looking for ways to unite her passion and her beliefs.
Kiwi born and raised, George's kitchen journey has taken him from New Zealand to Australia and now London, where he is a senior chef and part of the creative team at Carousel in Marylebone. His passion is foraging, or as he calls it, wild plant hunting. From the outskirts of Wellington, to coastal cliffs in Portugal, to green pockets of urban London, you can find George in his time off discovering wild edibles and getting inspired by what everyone else fails to see. Founder of the pop-up Mahi and the creative mind behind Samambaia, his talent as a chef and passion for sustainability is evident in every dish he creates.
